How is Badri Cow Ghee made?

If the ingredient is a high-quality one, then the process should be too; therefore, high-heat industrial centrifuges that separate cream from raw milk are never used in the production of True Badri Gee. Instead, rural Pahadi women preserve the ancient, time-honored Vedic Bilona method, a multi-step labor of love:

 

  • Step 1 (Boiling & Curdling): The fresh A2 milk is cooked slowly over a wood fire and cooled before being cultured overnight into whole thick curd.
  • Step 2 (Bi-directional Churning): The hand churned curd is put into very large earthen or wooden pots and churned bilaterally (bi-directional) with a wooden staff (Bilona) to split the curd into buttermilk and fresh cultured butter.
  • Step 3 (Slow Clarification): The cultured butter is skimmed off and melted over the required, low, controlled flame of wood-fire. The water evaporates, the milk solids settle, and a clear, amber gold liquid comes out.
